Kothu Parotta or Chilly Parotta

Ingrediants :

Parotta or Chapathi or Bread–6

3 tsp Oil

3 big Onions, cut lengthwise

4 Tomato, finely chopped

4 Eggs

6 Green Chilly

3 tsp of Garam masala

1 tsp Mustard seeds

3 ˝ tsp of chopped Cilantro (Dhaniya)

6 Mint leaves

7 Curry leaves

Salt to Taste

Directions :

First of all, Shred the Parottas into small pieces and keep them aside.

Heat oil in a pan and lightly fry the mustard seeds and few curry leaves in it.

Add sliced onions and green chillies and sauté until Onions turn golden brown.

Later, add the chopped tomatoes and continue frying for few minutes.

Add garam masala, chopped cilantro, few mint leaves and curry leaves.

Now, add the Parotta pieces to it and mix well. Cook for 7 minutes.

Add the eggs and cook the entire item for few more minutes till the egg gets fried.

After the dish is ready, garnish it with cilantro and green chillies.

Tamilnadu’s special snack item ‘Kuttu Parotta’ is ready!!! Serve it hot.
