Cucumber Raita

2 cucumber (peeled, seeded and cubed) 2 cup plain and fresh yogurt 3 tbsp chopped fresh mint 2 tablespoon lime juice 2 garlic cloves, minced 11/2 teaspoon ground cumin 1/2 teaspoon salt 1 teaspoon pepper

Anti Cholesterol Juice or Shake

2 large Orange, cut into slices 1 medium sized papaya, cut into pieces 2 banana, cut into pieces Crushed ice

Roasted Pumpkin Salad

11/2 kg butternut pumpkin/ butternut squash (Peel skin, remove seeds and cut into small cubes) 3 onions (cut into wedges) 1 tbsp balsamic vinegar 11/2 cup bunches asparagus (woody ends trimmed and chopped) 2 tsp olive oil 2 garlic cloves 2 tsp ground cumin 400g brown lentils (rinsed, drained) 2 tbsp water 100g feta (cut into small fragments)

Apricot Chicken

2 tsp olive oil 600g chicken breast fillets, cut into small cubes 1 cup dried apricots 500g chickpeas (rinsed and drained) 400g sweet potato (peeled and cut into small cubes) 11/2 cup chicken stock 2 leek, thinly sliced 2 large carrot, chopped 2 celery sticks, coarsely chopped 3 garlic cloves 3 tsp ground cumin 2 cups water 3 tsp honey Chopped Fresh parsley and steamed Green beans (garnish)

Cabbage Apple Salad

3 cups shredded Cabbage 2 cups Apple Cubes 2 tbsp Dill leaves, chopped 2 cup Low Fat Curd 3 tbsp Low Fat Milk 1 tbsp Sugar 2 tbsp Celery, Chopped Salt to Taste

Moong Dal Panki

100gm Moong Dal 11/2 tbsp Fresh Curd 2 Green Chillies, minced 2 tsp Besan Or Gram Flour A Pinch of Asafoetida and Sugar 11/2 tbsp Chopped Coriander 1 tsp Lemon Juice Slat, to Taste Banana Leaves
