Ingrediants :

: Besan - 5 cups
Rice Flour - 1cup
Butter - 1tablespoon

For the Jeera: Jaggery - 8 cups
Water - 1 cup
Cardamom - 6 (powdered)

Directions :

Sieve Besan and rice flour together; keep in a mixing bowl.
Add 1 tbspn butter and enough water to make thick dough.
Make portions of the dough, place into a sev mould, (large holed), press out straight into the hot oil in a rotating motion.
Gently turn over and remove from the oil when it becomes golden (in color) and crisp.
When cooled break into bits.
Heat 8 cups jiggery in a karai adding 1 cup water.
When the jiggery is melted strain through a strainer (to remove dirt and mud)
Heat again and bring to one string consistency. Add cardamom powder.
When you put a drop of the syrup in a bowl of water it should not dissolve.
At the stage put all the sev; mix well and remove from the fire immediately and mix thoroughly. (All this has to be done quickly)
When cooled, store in an air-tight container.
