Apricot Chicken

Procedure:

Ingrediants :

2 tsp olive oil

600g chicken breast fillets, cut into small cubes

1 cup dried apricots

500g chickpeas (rinsed and drained)

400g sweet potato (peeled and cut into small cubes)

11/2 cup chicken stock

2 leek, thinly sliced

2 large carrot, chopped

2 celery sticks, coarsely chopped

3 garlic cloves

3 tsp ground cumin

2 cups water

3 tsp honey

Chopped Fresh parsley and steamed Green beans (garnish)


Directions :

Heat oil in a saucepan over medium-high heat and cook the chicken pieces in it until they turn golden. Transfer cooked chicken into separate bowl, keep aside.

Now reduce the flame to medium level and fry celery, leek and carrot until soft. Add garlic and cumin, sir well for 2 minutes until they generates nice aroma.

Mix in sweet potato, chicken stock, dried apricots and water. Boil the whole mixture at low heat until potato turns tender.

Stir in fried chicken and chickpeas. Continue cooking, until the chicken and chickpeas are tender.

Add honey, mix well. Finally, sprinkle parsley and steamed beans for garnish.

Most nutritious and delicious Apricot chicken curry is ready, serve hot.
