4 large sweet potatoes, peeled and cubed 1 cup chickpeas, rinsed and drained 1 cup spinach leaves 2 large onion, chopped or sliced 2 medium tomatoes 3 tsp vegetable oil 3 tbsp curry powder 11/2 tbsp cumin powder 11/2 tsp cinnamon powder 2 cup water Fresh chopped cilantro for garnish
 

Spicy Corn Rice

2 cup brown basmati or brown rice 31/2 cups chicken broth, or vegetable broth 2 1/2 tbsp peeled pumpkin seeds 2 cup fresh frozen corn 2 tsp olive oil 1 cup finely chopped onion 3 green chillies, chopped 2 3-inch cinnamon stick 1/2 tsp cumin seeds 3/4 tsp ground cardamom 1/4 tsp salt
 

Avocado Salad Recipe

4 Avocado, Chopped 2 medium Onion, Chopped 2 medium Tomato, Chopped Pepper - 1/4 tsp Green Chillies 2 Lemon-1/2 slice Cilantro, chopped or powdered Salt to taste
