Broccoli Carrot Corn Salad

I cup Broccoli florets 1 cup chopped baby corn 1 cup chopped carrot 3 tbsp butter Pepper power and salt, as per salt
 

Oats and Mung Dal Tikka

Moong dal 2 cup Rice-1 cup Oats-1/2 cup Chopped Onion-1/2 cup Grated carrot, spinach and cabbage-1 cup 1 tsp Ginger Garlic paste Coriander powder-2 tbsp Cumin seed powder 1/2 tsp Fresh yogurt-2 tbsp Salt to taste
 

Cucumber Raita

2 cucumber (peeled, seeded and cubed) 2 cup plain and fresh yogurt 3 tbsp chopped fresh mint 2 tablespoon lime juice 2 garlic cloves, minced 11/2 teaspoon ground cumin 1/2 teaspoon salt 1 teaspoon pepper
 

Anti Cholesterol Juice or Shake

2 large Orange, cut into slices 1 medium sized papaya, cut into pieces 2 banana, cut into pieces Crushed ice
 

Roasted Pumpkin Salad

11/2 kg butternut pumpkin/ butternut squash (Peel skin, remove seeds and cut into small cubes) 3 onions (cut into wedges) 1 tbsp balsamic vinegar 11/2 cup bunches asparagus (woody ends trimmed and chopped) 2 tsp olive oil 2 garlic cloves 2 tsp ground cumin 400g brown lentils (rinsed, drained) 2 tbsp water 100g feta (cut into small fragments)
 

Apricot Chicken

2 tsp olive oil 600g chicken breast fillets, cut into small cubes 1 cup dried apricots 500g chickpeas (rinsed and drained) 400g sweet potato (peeled and cut into small cubes) 11/2 cup chicken stock 2 leek, thinly sliced 2 large carrot, chopped 2 celery sticks, coarsely chopped 3 garlic cloves 3 tsp ground cumin 2 cups water 3 tsp honey Chopped Fresh parsley and steamed Green beans (garnish)
